This is the wrap I would open a food truck to serve. I love it and I want to serve it to everyone. It's my husbands first choice for breakfast on a special day, or even just the weekend.
It can be served with or without avacado on the wrap, I prefer with, the hubby prefers without. You can change the meat from rosemary ham to bacon, I prefer the ham as it is not too overpowering or greasy. The wrap consists of 2 scrambled eggs (usually including a smidge of cream with oregano and basil), keep the eggs in the frying pan until cooked on the one side, then use a spatula to slowly loosen and flip them like a pancake (make sure your pan is a little smaller than the wrap you are going to be putting the egg on). I like to cook my eggs using the 3 on the oven dial, makes for good consistency and I have it on for about a minute before I put the eggs on. Lay a slice of rosemary ham in the middle of the eggs, then a slice of dill Havarti cheese, place a spoonful of pesto sauce and smooth out over the cheese, the final touch is a handful of crumbled feta (cheese and meat from Vincenzo's). Once the cheese has melted you are done, move this bad boy over to the wrap and fold it burrito style. YUMMY! Best thing about these is they are good sitting at home, or they are good on the go. Wrap it up in tin foil or saran and take it with you to work or if you are out and about early in the morning. My husband makes his own delicious version; in which, he actually scrambles the eggs, puts the toppings in the wrap and then the eggs, so they melt when you fold and eat. I am just meticulous and like to lay mine out just so and then wrap it so easily. |
My first attempt at making baby food.
Consisting of potato, green beans and carrots, yum! Plus one jar of avacado. The babe wasn't a fan of the potato, plus our mixer didn't want to blend it enough. Will try again with other foods. An interesting way to make babies enjoy the food, add cinnamon as a natural sweetener. |
Made chicken and cheese empanadas. Used a recipe I found on allrecipes.com for the dough and then mixed sour cream with marble cheese and shredded chicken. Baked them in the oven and waited until golden brown. They were quite delicious!

Found this recipe online, at Family Feedbag (a cooking blog I love), and decided to try my hand at it for Easter at my in-laws. Turned out a little more burnt then I would have liked, but they were very tasty for a first attempt.

My husband and I decided to be ambitious and make our own hand rolls. They actually turned out super delicious, although we suspect the very old tempura batter on the shrimp made the hubby sick. I was fine, so who knows. They consisted of homemade spicy mayo, tempura battered shrimp, avacado, cucumber and sushi rice. They didn't look all that fancy and restaurant perfect, but they sure tasted it.
