Fish Pie: poach 2 tilapia filets and 2 salmon filets (in 2 1/2 cups milk), drain over a bowl and save excess milk for sauce. Saute 1 chopped onion and 1 chopped clove of garlic in 1 tbsp of butter for about 1 minute, add 2 tbsp of flour and thicken. Slowly add in the excess milk and stir with whisk until thick. Add in a pinch of salt and pepper for taste and 1 tsp ReaLemon. Take off heat and add in 1/2 cup cheddar cheese and 1 tsp of dill and mix well. In the meanwhile, boil 2 large, chopped russet potatoes for 15 minutes. Mash and add 1 tbsp butter and 1/2 cup heavy cream.
Put the salmon, tilapia and veggies (1/2 cup broccoli, 1/2 cup peas, 1/2 cup green beans) in an 8x8 baking dish, top with sauce and mix. Top with mashed potatoes and another 1/2 cup of cheddar cheese. Bake in oven for 20 minutes at 400°F (205°C). Wait a couple minutes once out of the oven, serve warm. Enjoy with white wine, cider beer or apple juice for the little ones. Next time I will add a bit more flavour...still good though.
